Origin of carnival donuts or krofi
The origins of donuts can be traced back to Imperial Vienna, where court cook Cecilia Klumpf first started making donuts. The recipe for Cecilija gradually spread throughout the monarchy, and the recipe even reached Slovenia.
The Slovenian donuts were somewhat different from the ‘Imperial’ ones in terms of preparation, size and ingredients. In Vienna, donuts were fried in melted butter, but our ancestors fried them in lard and later in oil. The original donut had an irregular shape with claw-like projections, hence the name. They were also called “funkurzi”.
Krofi or carnival donut recipe
material:
- 600g wheat flour
- 1 teaspoon salt
- 5 egg yolks
- 80g sugar
- 80g butter
- 30g yeast
- 200-300ml milk
- 1 tablespoon rum
- grated lemon peel
- apricot jam
- icing sugar
Preparation:
First, crush the yeast and mix 1 tablespoon of sugar and 2 tablespoons of milk from the total amount of sugar. Add flour over the mixture. Place the remaining cake flour in a bowl, make a hole in the middle and pour in the yeast mixture. Cover with a cloth and let stand for a few minutes to allow the yeast mixture to float.
Separately mix the lukewarm water, melted butter, egg yolks, sugar, salt, lemon zest and rum and pour this mixture into the flour.
Roll out the dough to a thickness of about 1.5cm on a floured surface, and cut out a circle with a diameter of 5-8cm. Cover the circles or donuts with a cloth and let them rise again for at least 30 minutes.
Heat the frying oil in a frying pan and place the fried donuts face down. After a few minutes, flip the donuts quickly and fry the other side until golden brown. Remove the donuts from the oil with a skimmer and place them on a paper towel to drain the access oil.
Fill donuts with apricot jam using a syringe. Place the donuts on a plate and sprinkle with powdered sugar.
Carnival Fried Dough Balls Recipe

material:
- 300g wheat flour
- 15g yeast
- 30g sugar
- 3 egg yolks
- 60g butter
- 150ml milk
- salt
- 30g raisins
- oil or lard for frying
Preparation:
Knead the fermented soft dough, add raisins and leave to ferment. Scoop the dough with a buttered spoon and drop it into the hot oil. Fry until golden brown.
Scoop the fried dough balls out of the oil and dust with sugar (optional).
