Homemade American pie shop that has proved popular in Zagreb

It’s been more than half a year since Elvira Petak turned her love for baking American pies into a business and decided to open the first shop specializing in homemade American pies in the Croatian capital.

“In 2020 I had a big career turn. Fortunately, I lost a job I didn’t like very much and made a big decision to work on this project,” said Treschnevka near the center of Zagreb. Elvira told us when she opened the Friday Pie Shop.

When it opened, Friday Pie Shop was offering eight different pies. Each pie with its own name – Jolene (apple pie), Marilyn (forest crumble pie fruit), Virginia (brown pie), Nancy (chocolate and banana pie), Dorothy (coconut cream pie). The menu also included quiche pies such as Austin, Billy Bob, and Lorraine.

Elvira, who specializes in making shortcrust pastries, says the pie contains no additives, white sugar is used only for sprinkling, and all ingredients are sourced from a local family-owned farm. say.

We caught up with Elvira and looked at how our business is going today.

It’s been over 6 months since I started the Friday pie shop, how was it compared to what I expected?

Six months ago I had a clear vision and it was all planned, but I worked so hard that in most cases I wouldn’t even expect it. Of course, I was hoping that the job would prove sustainable, but now I’m happy and surprised that it’s been accomplished.

My customers are mostly young families, but I also have employees from various companies. You started by offering eight different pies – which was the most popular?

I started with 8 different pies, and I think there is always an apple pie number one. At least when a new customer asks for a recommendation, I always recommend it. There are weeks when only chocolate pies are ordered, which means there are a lot of chocolate pies. Sometimes customers only want chocolate, even when I serve fruit. It’s hard to say. But if I need to pick out the most popular pies, they are Jolene – apple pie, Cindy – cherry pie, Virginia – brownie pie, Nancy – banana and chocolate pie, and quiche pie.

Did you add another pie?

Over time, we’ve added five more new pies.Josephine, crumbled apple pie Caramel, Cindy, Cherry Pie, Lucy, Pumpkin Pie, and a special Christmas pie – Mary, a chocolate cream pie with hazelnuts Rum and Charlie – Gingerbread Creampie.

The pie was supposed to be seasonal and out of stock after winter, but since customers are very pleased with it, we decided to make it last a little longer. Fortunately, they were shot without Christmas decorations!

We also added mini pies sold in small and large packages (6 or 12 mini pie), and soon I’m planning some other version of the mini Pie-not round in shape!

The Friday Pie Shop offered deliveries and takeaways only when you started – is it still so?
